Mini Roll Up Pizza's

This morning I was up and out of the bed early when I suddenly got that sinking feeling.....I realised that I had no lunch ready for work. For someone who loves cooking and is as organised as me sometimes I just find it so difficult to get my act together the night before and make a delicious lunch for work. With the exception of the days when I have some tasty left overs left aside from the night before most days I wake up and haven't the time nor imagination to conjure up something appetizing for my 1 O'Clock munchies. The irony of it is I generally make very little effort with my lunch but it seems to be the point in the day when I'm absolutely starving! Come 11am I can think of nothing but lunch. So to remedy this ongoing battle with myself, I'm going to do a little research and come up with some very quick and easy lunches that are really tasty. Bringing your own lunch to work really does save you a lot of money. At the moment it seems to be on trend bringing your own lunch with a wide variety of really cute and funky lunch boxes, lunch bags etc. available from places like Paperchase, Cath Kidston and most department stores. I've even noted some really nice novelty lunch boxes in the €2 euro stores of recent. 

To start off this morning I decided to create Mini Roll Up Pizza's. All of the ingredients for this recipe were bought in Aldi with the exception of the sun-dried tomatoes but only because they were out of stock. Aldi is as cheap as chips and the quality of the food is actually very good.....meaning you have more money in the pot for the important things!

Mini Roll Up Pizza's

Ingredients:
1 x 9 inch garlic (You can also use a plain wrap)
1 tsp of red pesto
2 tsps of crumbled goats cheese
Sun-dried Tomatoes (3-4)
Handful of spinach, watercress and rocket leaves

Method:
1. Put the wrap onto a plate and smear the pesto all over until the wrap is well coated.
2. Evenly disperse your salad leaves over the wrap.
3. Chop the sun-dried tomatoes and disperse.
4. Finally crumble the goats cheese over the wrap.
5. Place in the microwave for 30 seconds to soften the cheese.
6. Remove from microwave and roll up tightly. Set aside to cool.
7. Slice into pieces.

    I'm really struggling to come up with healthy lunch ideas myself and just end up splurging far too much on lunch out.
