Rainbow Lemon Madeira Log
Ingredients:
125g softened butterIngredients:
180g Self-Raising Flour
150g caster sugar
2 eggs
1 lemon (zest and juice)
Method:
1. Preheat over to 170°C. Grease and line a 1lb loaf tin.
2. Put all of the above ingredient in a large mixer and combine well until smooth (do not
overmix).
3. Then divide the mixture into 3 separate bowls, ensuring equal quantities are put into
each bowl. Using a food colouring of your choice, colour the content of the three
bowls ( 3 separate colours).
4. Take your first bowl of mixture and spread a layer across the base of the loaf tin,
ensuring to push into the corners. Next taking your next bowl of coloured mixture,
lightly layer the content on top of the first colour.Repeat process with final bowl of
coloured mixture. Ensure top is levelled and sprinkle with sugar.
5. Bake for 45 minutes or until risen and firm to touch. Leave to rest in the tin for 4-5
minutes before turning out onto a wire rack to cool completely.

If your looking for a loaf tin and are considering a silicone one I wouldn't recommend it. Cakes and breads don't seem to cook at the same pace in silicone and also don't develop crispy edges the same way they do in a tin. That said when baking cupcakes I find the silicone trays very useful, but I think the reason for this is that cupcakes are much smaller. But never fear, no need to spend a fortune on a loaf tin as Dealz stores are selling a perfect 1lb loaf tin for just €1.49.
Where are DEALZ stores?! Sounds fantastic! I often find that I spend way too much on simple baking tools! Love the colours in the cake!! Erika x
