This dish is another quick and easy dinner that is ready in minutes and is great for busy
evenings when you get home a little later. Salmon is a great alternative to meat if your in need of a change and is a source of high quality protein and omega 3 fatty acids, so brilliant for your brain. This is a really great value dish and can be put together for less than €5 (so no excuses to all you students and frugal friends out there!). This recipe will more than feed two hungry adults and I usually have a little left over for my lunch the next day.
Salmon & Asparagus Cream Cheese Pasta
Serves 2
Ingredients
2 salmon darnes (skin removed and cut into cubes)
1 onion (diced)
3 cloves of garlic (minced)
6 asparagus spears (cut into 2 cm pieces)
1 tbsp rapeseed oil
1 tbsp tomato purée
80g low fat cream cheese
3 tbsp low fat milk

Method
1. Begin by cooking the pasta of your choice in a saucepan.To measure how much pasta to
cook, as a rule of thumb for pasta shapes, I take a cereal bowl and fill it ⅔ with uncooked
pasta. This amount of pasta is just enough for one person when cooked.
2. Meanwhile, in a separate pan, fry off the onions and garlic in the oil. Once softened add the
salmon pieces and fry off for 1-2 minutes. Next add the asparagus pieces and continue to
cook.
3.Once the salmon is cooked through and is a solid colour, add the cream cheese, milk and
tomato purée.
4. Finally add the cooked pasta to the pan and stir together until the pasta and salmon is well
coated in the cream cheese sauce.
5. Serve in a plate or bowl and garnish with fresh basil to serve.
